Over the holidays, we were serving turkey - a lot. So we had a good deal of turkey leftovers and one of our favorite things to make is Turkey a La King. Didn't have pimento, so I spiced it up a little with some RoTel tomatoes.

Looks good. You could saute some cellery with the onions and mushrooms in the begining. You could add cooked carrots (with or instead of the tomatoes). Whatever you have.

Serving over the stuffing/dressing is a great idea. Very warm and fuzzy. :-)

You could also place this mixture in baking cups with a layer of puff pastry on top and bake until golden brown.

Really versatile. Thanks for sharing.
