Mexican Casserole ala Ralph

This concoction is Ralph's creation - very tasty and easy to make. It features Mexican chorizo and kind of bakes like a frittata.

Somehow I missed this but I'm glad I discovered it. I like dishes that can be partially prepared in advance of company or that keep well in a warm oven. This is great for inviting friends over. Everyone loves huevos con chorizo and this takes it up a notch or three. There's a huge Latino supermarket near me that makes several kinds of chorizo as well as tortilla chips from scratch...big vats of shucked corn soaking in something. I'm going shopping for this casserole and will probably throw some sliced olives on top for color (black?)  Always nice to see Ralph at the controls. Kevin's getting better behind the camera but all the swaying and sashaying still make me dizzy.
