KAHLUA MOUSSE

6 1 oz squares semi-sweet chocolate
1/4 cup water
1/2 tsp instant coffee powder
2 eggs
1/2 cup sugar
3 tbs Kahlua or other doffee-flavored liquer
1 cup whipping cream, whipped
additinal whipped cream (optional)
fresh mint leaves (optional)
Mandarin Orange slices (optional)

Combine Chocolate, water, and coffee powder in a smal bowl, microwave, uncovered, for 2-3 minutes or until chocolate is softened, stirring after 2 minutes. Stir until smooth and melted. Set chocolate mixture aside, and let cool

Beat eggs in a medium bowl at medium speed of an electric mixer until thick and lemon colored. Add sugar and Kahlua, beating well. Gradually add melted chocolate mixture in a slow steady stream, beating until blended. Cool completely. Fold in whippd cream. Spoon into small cordial glasses or custard cups. Cover and refrigerate at least 2 hours. Garnish with additional whipped cream, mint leaes, and orange slices

(and no, we're not talking about me!)

Fish Fillets in Coral Sauce

(Adapted from Byerly's Markets, Twin Cities MN)

9x9 glass oven dish
Waxed paper

2 tablespoons butter or margarine

1 1/2 tablespoons lemon juice

1/2 teaspoon onion salt (or onion powder)

dash (white) pepper

1 teaspoon (mild) paprika

1/2 teaspoon dried dill weed

1 pound orange roughie (or other mild fish) fillets

Melt butter in the dish, uncovered, on High until melted, about 30 seconds. Stir in everything else but the fish. Place the fish in the mixture, then flip them over to coat both sides.

Cover with waxed paper, Cook on high 4 1/2- 5 minutes, or until fish flakes.

Cooking times based on a 700 watt "high" power.

I serve this with steamed rice and whatever green vegetable looks good at the market that day. (Have them ready before you cook the fish!)
