Looks like the way to go is to list the recipes, than take requests. Here are the dessert recipes I didn't list before.

As good as it's easy

(and no, we're not talking about me!)

Fish Fillets in Coral Sauce

(Adapted from Byerly's Markets, Twin Cities MN)

9x9 glass oven dish
Waxed paper

2 tablespoons butter or margarine

1 1/2 tablespoons lemon juice

1/2 teaspoon onion salt (or onion powder)

dash (white) pepper

1 teaspoon (mild) paprika

1/2 teaspoon dried dill weed

1 pound orange roughie (or other mild fish) fillets

Melt butter in the dish, uncovered, on High until melted, about 30 seconds. Stir in everything else but the fish. Place the fish in the mixture, then flip them over to coat both sides.

Cover with waxed paper, Cook on high 4 1/2- 5 minutes, or until fish flakes.

Cooking times based on a 700 watt "high" power.

I serve this with steamed rice and whatever green vegetable looks good at the market that day. (Have them ready before you cook the fish!)

Oh, yeah--

That's with fresh, or defrosted fillets, and there's enough sauce/drippings for the rice.
