Charlie- I use the whole thing but you can stem them if you like. I actually use a bunch of the cut stems in the broth that I simmer in the recipe then throw them right in. I usually brush mushrooms clean if I'm sautéing them. Supposedly they soak up water if you wash them. Paper towel does nicely- I don't have (or have need for) a mushroom brush! Talk about a unitasker!

Hans, it's a Garrard. We found it without the bracket that screws to the wall, so we fashioned one. Then the unit just hangs on the bracket!

Thanx for what to do with the stems.

I can't believe on the East Coast anyone doesn't know what "Schkeeve" means!

BTW, your recipe for stuffed cabbage (hulupki) is 99% the same as mine! I do cook mine before freezing, however. No one ever complains!
