We have been under a blizzard watch since Thursday, Saturday it turned to a warning and today it hit.
I fully intended on not going into town today, because of weather and.. drama, but I went..
Went to the grocery store yesterday intending on buying a cooked piece of prime rib and a twice baked potato. The meat counter was out, but had a 4lb pre-seasoned piece left for $30. The other steak I was looking at was 18 bucks so I figured what the heck.. (It was covered in a margarine and seasoning mixture, I cleaned it off pretty good before I did my seasonings.)
First prime rib I've made not in a huge smoker... Made it today, was gonna just put it in the fridge, but Mom called before I left the house telling me not to come in cause my sister (the reason I didn't want to go) wasn't coming and the chicken she bought and baked had gone bad... I said "I've got a prime rib that I just pulled out of the oven and it came out perfect and I'm just waiting on my loaded baked potato casserole to finish, I'll pack it all up and bring it to town."
For being my first, it wasn't half bad. I got the au jus too salty, but it wasn't horrid. Mom even ate it, which surprised me, she hates prime rib.
The journey from the oven to my moms place ended up being about 45 mins, so the prime rib was a bit over done since it wasn't cut and was still springing in temp. It still tasted great.
Anyways, Merry Christmas everyone!
