So you see, this thread went from showerheads to pooping and then eating again??? What a cycle. Not necessarily in the correct order though. LOL

Yum...I think I am going to make the Spankmypita this weekend. I love fresh spinach. I'm wondering, if I could use Pep. Farm Puff Pastry dough instead. Steve? Would that work?

Carol.. You have to use frozen phyllo dough, not puff pastry. Steve makes these and uses phyllo.

Now if you are really LAZY.... COSCO has the already made in triangles frozen, called the same Spanokopita. They are DELICIOUS! They come 48 to a box for around 9.99 in New Jersey.

Give it a shot.

If you yourself are supposed to add butter to that dough- use less, butter makes it flake and puff up. and/or add some (olive) oil to the butter and it wont be so flakey.

If you are using frozen spinach, be sure to push it through a strainer (once cooked) to remove as much water as possible.

Puff Pastry

This could be an alternative. The puff pastry has a lot of butter in it already. These squares would just be a little puffier.

Steve, I still like the way you make them the BEST! You are right about working with phyllo. i had to watch someone first.

Cosco is a good second alternative.

MOCK/EASY SPINACH PIE
=====================

2- 10oz pkgs frozen chopped spinach (or rough equivalent)
1 onion, chopped
1 bunch scallions well rinsed, topped, tailed, diced.
1 cup feta cheese (1/2 to 1 pound) Crumble with fork.
1 cup grated romano cheese
3 eggs
2 cups BISQUICK (or fake it with flour and baking powder).
2.5 cups milk. Whole milk preferred.
Pepper and dill to taste
DO NOT USE SALT. The feta is loaded

In 1/4 cup cooking oil and 1 TBS butter- saute:
spinach, onions, and scallions. DO NOT ADD WATER WHEN USING FROZEN SPINACH. Spinach may be added frozen or to speed things up pre-thawed in zapper (m-waver).

Saute in covered pot over low-ish heat until spinach melts, defrosts and deepens in color. Stir occasionally. Take lid off to evaporate water as needed. Drain in strainer. Push out water.

Prepare medium pan (aporox. 10 x 15 inches) with oil, butter or pam. Use paper-towel to spread evenly and up the sides.

Mix all ingredients.

Bake at 350*f for 45 minutes or until toothpick inserted in the middle comes out clean.

Crumbled feta is CHEAPER in Greek stores because it is the scaps and not to be served at the table- it is for cooking.

In American stores crumbed feta is more EXPENSIVE because y'all are lazy @$$es. DUCK AND RUNS FOR THE HILLS. LOL

Traditionally pita (means same as *pizza* => *flat*) is served at the end of a meal OR as an appetizer in smaller poritons.

EMPANADAS
PIZZA
STUFFED PIZZA (pronounced PITSA, as we all know. LOL)
PITA

as above, except, for the filling these quantites change:
2 pounds spinach => 32 ounces [that's 3 x 10oz frozen pkgs, dear]
4 eggs
0 milk
0 flour/bisquick
1 stick unsalted (sweet) butter for the dough.

Leeks may be added (sauteeed with other stuff), just reduce the scallions (a/k/a/ green onions).
