It should shut itself off when the water has boiled away.  If there's water left on the bottom then the thermostat is malfunctioning.
 
I think there's a small thermostat adjustment screw on the bottom of the egg cooker (there's a hole next to the nut); you may want to try turning that *very slightly*, maybe half a revolution one way or the other, and see if you have any luck.
 
Rich uses one all the time for soft-boiled or poached eggs (has 2 different models). He's got the water amount down pretty well using the measuring device in the lid, but the temp of the eggs matters too. If they're straight from the fridge a bit more water will be needed than if they were room-temp.

As for a tool to chop open an egg, there's a scissors-looking contraption where one end is a loop that you slip over the egg and the other is a blade. When you squeeze them together, the blade chops the top of the egg off right above where you put the loop. Rich prefers to use the spoon to crack around the egg and lift the shell off.

Fred, thanks for the reminder about the adjusting screw -- how quickly I had forgotten it was there!  I noticed it and figured that's what it was for, so a simple adjustment may be all that's necessary.

 

With my hard cooked trial, the water didn't all boil away prior to shut-off so that's what makes me suspect the thermostat needs some tweaking.  The eggs did come straight out of the fridge, which I thought about as I placed them in the rack, but even so, there was still water remaining after the unit cut out so it didn't even run the required length of time for room temperature eggs.  I could swear when I had it on the bench for testing before cleaning it up, it cycled off after all water was gone.  I'll test it again and make adjustments accordingly.

 

I think I may have one of those egg cutters kicking around, but I usually just use a spoon. 
 
I have an old 50's Hankscraft model that still works like a charm.. As well I found a new plastic Henrietta the Hen at a thrift store that also works well. It chirps when the eggs are ready.. You can still buy them pretty cheap at, less than $20 in some stores.

Egg cookers....

If I had a larger kitchen I'd get one of those, even though surely not in the list of "must have" for me.
I used to have a weird and ugly modern one that was cow shaped (what cows have to with eggs then??? LOL), it was given to me as a birthday gift, it was kind of useful in certain occasions as it allowed me to follow something else meanwhile.
Needless to say that it didn't find it's use daily and often it was really less time and bother to take out a pan than take out the cooker, measure water plug and set up the thing, that is why mine ended up on sale, but if I had a larger kitchen I'd have kept it, having it ready on the counter makes it worth it for me...
I do not have eggs for breakfast, actually I always skip breakfast... but I think that for those who eats eggs often and have to do something else meanwhile it is an help, not needed as a toaster, but sure a little further help.
I think that while the thing cooks automatically one could get prepared for the morning without the risk of overcook them...

I found if you scramble and cheese your egg and pour it into the poachers you get FANTASTIC steamed mini soufflés ! Nice and puffy with NO BONES!

 

And now I take a piece of Canadian bacon lay it in the poacher, crack an egg into it and put a dab of FONTINA cheese on top-- wholly moly its a brand new breakfast day in automatic minutes!
