I made myself a birthday cake, I hardly EVER make layer cakes, because I always have problems icing them...this time was no exception, this cake came from my neighbor Polly Laney, she was probably the best all around cook I ever saw, and to the thousands of kids she taught College Prep English to at Lenoir high School, She was the greatest teacher ever..and probably the toughest, Polly absolutely will not allow a mix of any kind in her house, she does all her cooking on a mid sixties 40 inch double oven Westinghouse!! She can make this recipe and have plenty of icing, I never have quite enough!! My cake tastes about as good, but always looks like a 12 year old made it! This gave me a chance to use my latest mixer find,a Farberware, thanks to our own Kelly who kindly sent me all the parts I needed..It works GREAT!

Recipe!

Swiss Chocolate Cake
Preheat oven to 375
Grease and flour 3 nine inch cake pans
Then, in double boiler,combine
1-6oz pkg semi sweet choclate morsels
1/4 cup water
While the chocolate is melting..
Sift together and set aside..
2 1/2 cups all purpose flour
1 tsp baking soda
3/4 tsp salt
Blend together in large mixer bowl.
1 3/4 cups sugar
3/4 cup butter
1 tsp vanilla
cream this well ..add
3 eggs, one at a time
Then add
flour mixture alternately with
1 cup buttermilk
divide batter into the 3 pans, bake 25 to 30 min
turn out on wire rack to cool.

Frosting
In Double boiler combine...
1 6 oz pkg semi sweet choclate morsels
1/4 stick butter
1/4 cup canned " Evaporated" milk
When melted and combined, add 1 1lb box sifted powdered sugar ,add a little at a time, when blended, add more canned milk until spreading consistency..this frosting is a pain to work with, but is it GOOD!

Melting the chocolate in Rena Ware!

Oh yeah...I have sinned,,,See my new stove! I have never owned a new appliance before, I hat to admit it, but I like it!

Hans,

I used that exact same size Rena Ware kettle to cook rice for supper tonight.  We had a Crock Pot venison roast, cut into bite size pieces, to go with the rice.  Those vintage kettles are the best IMO.

Oh hell....its late and im tired!

After adding eggs, before adding flour, blend in the melted chocolate,,,It will be a wonder if anyone can make this now!!!
