These are no-bake and simple:

1 C choc chips (called for milk, I use super dark bitter-sweet)
14 Large marshmallows (I used an old stale bag of minis)
5 T butter

Melt all that over low heat.

Stir in:

2 C oats (called for quick, I used regular)
1 t vanilla

Quickly form balls on put on wax paper (I used parchment) and chill till hard.
 
These sound like they are like, very much like, in fact, totally akin to Swedish "kokosbollar" (won't use the un-pc old name here) that you can sometimes get at IKEA.
 
Not much of a mess.......

if you portion them out with a # 90 spring loaded disher (Cookie scoop). OXO makes a good one, so does Vollrath.

I bake a lot of cookies for community events, parties, and just because I love to bake, and a # 90 makes a nice size cookie, about 2 inches around.

The mixture in step one could be very easily made in the microwave. It's fun to watch marshmallows expand in the microwave.

I've not made these with butterscotch chips, but they're pretty good with white chocolate chips, and a small sploosh of almond extract.

I have a similar recipe..

<span style="font-family: verdana,geneva;">..that has some peanut butter in it.  Those are really good too.  Ditto about the scoop.  I always use one to make cookies because I like them to all be the same size and shape and it reduces the mess a bit.</span>
