That was the machine we had in the dish room at St. John's University, Collegeville, when I was a student there from 1990-94. I spent 2 summers feeding and harvesting dishes from that beast! Ours was steam-fed from the central plant.
The dishwasher you used @ St. Johns was either an FT-700 or 800 series. Washermail me and I can tell you the differences between the 2 series. FYI FT-900's were not made before the mid 90's.

It was installed in the summer of 1991. Previous to that we used an earlier model most likely from the 1970s. It was frightening and we had to wear ankle boots to keep our shoes dry. The new machine was a cause of great rejoicing in the fall of 1991!
Would have been an FT-800 series. Not sure why you needed the boots unless the tanks were cracked or sewers not working. I used one of these @ the Minneapolis Airport Marriott in the late 90's.
