Quite frankly, I would rather use two electric ranges, which would give you more flexibility in placement like one in the main kitchen area and one in the baking/canning/holiday part of the kitchen. If you use vintage 40" ranges you could have the option of 4 ovens or, if you use single oven ranges, you could have a double wall oven to augment baking capacity. All of this would be much easier to keep clean and cooler to use and not require reinforced floors and fireproof floors and surrounds required by fire codes for the commercial gas range.
If you were looking to heat part of a house during a winter power failure, this would be the range for you.
