I've always noticed commercial kitchen exhaust hoods have those louvered filters that run up and down. It seems the really old hoods had aluminum mesh filters like household hoods usually do. I've seen them in old photos of the White House kitchen. Why did they change? I think I've also noticed the hoods at McDonald's over the fryers and grill have a diamond pattern to them, they're also really close to the cooking surface for some reason.

Does anyone recall the movie (I think it was a kid's movie), where someone won the lottery I think and the tickets got sucked up into the exhaust hood? I believe it took place at a McDonald's (this was in the early 90s when I saw it). I could be wrong on those details.

One funny tidbit about an exhaust hood. My neighbor used to own a restaurant and their wife claimed they were making pancakes one day and when they flipped it, the exhaust hood sucked it outside! I find it hard to believe, but they claimed it was a true story.

Another final tidbit, when I was in elementary school, one of the lunch room ladies put a stack of Styrofoam containers to close to an oven or a stove-top (can't recall exactly) and they caught fire. The exhaust system sucked the smoke outside, and it was quite a sight, the sky was filled with tons and tons of black smoke.
