The energy saver switch probably monitors the incoming water temps into the machine and adjusts them to a certain temp. Not sure on Maytag, but on others if HOT is too hot the machine will add cold water to cool it down, same thing for WARM if it's too warm it will add more cold water to cool the warm down. It's done by the machine measuring the temps of the incoming water and turn the valves off and on until the water level is reached and the right temp is reached.
 
That's my dryer.  The energy saver switch added a bity of cold water to hot to make it slightly cooler (say 140 to 130 or 120) and warm from 100 or 105 to 90 or 95.  This model was my mom's last washer and the companion dryer was similar to above, but didn't have the variable signal sound level and the press care rocker switch was actually signal on or off.  There also wasn't an air fluff temp button.  That was simply the press care portion of the perm press cycle.  They were bought at Circuit City.
