Friday dinner

Been listening on the radio about the New Orleans Jazz Cafe here in CoMO and it got me to thinking I haven't made jambalaya in awhile, so before the Seth MacFarlane show at Jesse Auditorium I made a pot of it, but instead of rice, I use grated cauliflower for more of a veggie kick.

chopping up a baseball size onion

a chopped up bell pepper and the onion in some EVOO (extra virgin olive oil for you non Rachael Ray fans)

Since I had no shrimp, it was chicken and smoked sausage for the meat choices

The meats browning up in some EVOO

throw the meat in with the caramelized onions and pepper, looks yummy already

throw in 2 cans of diced peeled tomatoes, along with a kick of crushed red pepper

for a little added flavor

add the cauliflower and some tomato juice to get some liquid into the mix

cover and simmer on med. heat for 30 minutes and voila

Bon appetit. I still have 3/4 a pot left and I guess it's leftovers tonight.

The cauliflower "rice" I learned from Suzanne Somers recipe contest book from years ago when one of her many Somersizers made "legal" fried rice with this.

And how could we tell even if you didn't say that you were in Columbia? You were using Kroger brand products (Kroger pulled out of St. Louis in around 1987) and the closest they get is an hour away (Louisiana, MO, Farmington, MO, Litchfield, IL). What are they in Columbia? Gerbes?

yes the Kroger stores in Mid-MO are Gerbes, down in Southwest MO they're Dillons or Food 4 Less.

I should've added that the radio ad reminded me I haven't had any cajun food in a while and I haven't made jambalaya in so long, so I decided to make it myself so I can photo it and share the process like some of yall do with your Sunday dinners.

EVOO

I recognize that bottle. We dont have krogers here in Illinois. I'm from Cincinnati Ohio and Krogers was the main place to shop. As much as I hated krogers when i Lived there, now i miss it. Grocery shopping here just isnt the same.
