Have any of you ever made a Friendship cake? Can I ask what the hell is the point of going to all of that trouble and time just to create some lightly fermented canned fruit for a cake that's mostly Yellow Cake mix with pudding in the mix? I've tasted one and it was delicious but I challenge anyone to discern the difference between one of these that takes 60 days to make and one made with canned fruit, some wine and some brandy.

Hello?

Is there a formula/recipe for a Friendship cake made from scratch where the fermented fruit actually does something?

That was a big hit back in the 70s, I think, although it could have been the 80s. It was after I moved up here. My mom and her friends all got that stuff going. Some got tired of baking and just ate the alcoholic fruit with a little of their favorite flavor added. Then they dropped all pretense and just had fresh fruit tossed with or marinated in various liquors. The recipes did wonders to get some church women familiar with the properties of alcohol. Did you know that Cedar Waxwings can eat fruit and ferment it in their gut? We used to see some wild flying when the fruit on the Ligustrum japonicum was ripe.

40 day cake

I have a recipe for the same cake, but it was called 40 day cake. Although it takes along time to make, I think the wait is worth it. The outcome is yummy!

That was a popular thing around here in the early 90's
I recall making it with my mother as a child. I thought it was quite a tasty cake.
after making so many of these cakes we tired of it and threw out the starter

Back in the late 80's

severeal of my co-workers were all into the Friendship Cake.  One of my co-workers gave me a starter and I fooled with it until I finally baked it.  It was okay, but I did not think it was worth the trouble.

I remember

My Mom and her friends making these and passing the "starter" around to each other. Does anyone have the actual recipe? I remember it being a very good cake but don't know what ever happened to her recipe. It may take a while to make but hey.. they say good things come to those who wait...lol...

I remember this cake very well - I think the last time I made it was in the early 1980s. I,too, would like to get the recipe again (for the cake and the starter) if anyone out there has it!

Most of those pudding cake recipes come out close to a pound cake in texture, i.e. heavier than a layer cake with a denser crumb. Seems like you could go by the recipe size (a layer cake box mix does well in a small Bundt pan) and find a pound cake recipe that specifies the pan size. If your friendship cake recipe said to bake it in a 12 cup Bundt pan, I think you would need to find a pound cake recipe with 2 cups of flour or less to be the size of a 2 layer box mix. I don't know how much fruit is added or what it does to the volume of the batter so if the 12 cup pan is called for, all of the stuff mght not fit in the smaller pan, although it makes a nice tall cake. I assume you use the juice from the fruit for the liquid. With a little studying of the FF and PC recipes, you could probably come close to achieving what you want.
