It Doesn't Take Long

The mixer has a large shepherd's crook dough arm and the bowl rotates with a motor driven gear.  It is quiet, powerful and quick.

Schmear Campaign

Adding egg whites to butter, brown sugar and lots of cinnamon makes the filling stay in place as the cinnamon bakes.  The protein in the egg white expands and holds the butter and sugar inside instead of melting to the bottom of the pan.

Rollin Rollin Rollin

Well kneaded dough isn't sticky and easy to roll.  A quick schmear on the rolled dough and they are ready to rise.

Hardened Evidence

After their third and final rising until doubled in bulk the cinnamon rolls bake at 350 for 20 minutes.  A quick brush with melted butter as they come from the oven keeps them soft.  Adding white Karo to the glaze causes the glaze to trun to a non sticky fondant when applied to the hot rolls.  Part of the glaze sinks into the hot rolls and the remaining glaze on top become shiny.

 

The Braun was a gift from Pete and I use it weekly.  The attachments are among the best of the multi purpose machines.  I have a shredder, blender and grinder.

Running into the Wind with Your Mouth Open

Angel Food cake is not the most substantive of desserts yet the benefit of fewer calories helps to cement it's place in the recipe line up.  This recipe has cocoa.

I'm Hooked

Dough hooks on American made Sunbeam mixers are a scary prospect for the unwary user.  I find they work better using the mixer as a hand held for bread.  That said the dough hooks do an amazing job of folding without losing the slightest amount of volume.

5 Quarts in a 4 Quart Bowl

The recipe uses 2 cups of egg whites which makes a huge cake and keeping it in the bowl takes three hands.

Smooth Food

I have a friend living with cancer and its hard for him to eat.  Its been my experience soft textures and creamy mouthfeel help.  When we age or when we are sick getting enough protein rich calories is a challenge.  With the left over egg yolks comes first a yellow cake.

A Tres Leche Cake combines canned milk, condensed milk and milk which is then poured over the cake and allowed to rest until all the liquid is absorbed.

Oodles of Noodles

Know the difference between pasta and noodles?  Eight Dollars!  The remaining egg yolks, a little salt, olive oil and a lot of flour makes noodles.  Its fun to make them in the processor and watch the dough turn into a ball and go zooming around the bowl.

Pull the Ripcord

After the noddle dough is rolled thin, sprinkle it with a little flour and then roll it up into a long tube.  Cut across the log of dough and the grap the seam edge and unwind the noodles.

A Little Bit of This and That

Onions, garlic, salt and pepper, diced chicken all browned together then simmered with chicken stock make the base of chicken and noodles.  I added some carrot for color.  When the chicken is done add the noodle and stir to prevent sticking.  Fresh noodles will be ready to serve in five minutes.

55 minutes and a Finish Power Ball later no trace of the noodle dough remains.

I have a Braun KM32 too, although it doesn't look as good as yours. It's a wonderful machine for bread dough. My experience with mixing cake batter in it is less satisfying. The centre doesn't get mixed very well IMHO.

Always good to see a baking post from the master!  I've been thinking about some cinnamon rolls for a while, might try some using the egg white tip, plus the Karo syrup.  Care to share how much of each?

 

I use my basic sweet dough for both cinnamon rolls and nut or poppy seed rolls.  only problem is it makes too much and I don't want the calories.  I think I'll make a batch of nut rolls and send 3/4 of the calories  off to a friend in Vermont.
 
Boy, you sure don't fool around when it comes to baking. I like to think I'm pretty efficient in the kitchen, but it would have taken me forever to get all of that done. The cinnamon rolls look good enough to pluck right off the screen. Stupendous, as always, Kelly!
 
Wow!! The cinnamin rolls look so good-Seems like the Braun mixer is another "roto tiller in a bowel"looks like it does a nice job.And do I spot a Sunbeam food processor-my Mom has one of those.Very powerful machine!!Remember preparing some dough in my Moms and it tripped the breaker!Yours and hers are the only ones I have seen.A brute of a food processor-if you can get it into its bowel-it will try to process it!Kelly--You sure make some really nice,tempting treats-too bad my computer doesn't have smell-o vision and taste-o-vision!Makes me want to lick or bite a plug out of the screen-those things look so good!!

I can't look at any of your posts on an empty stomach because my mouth literally waters at the site of your baked goodies. Those cinnamon rolls look scrumptious! I love how you make it look so effortless - but I know it's because you know what you're doing ;-)

I could really go for a big piece of that chocolate angel food cake right now! I've only made a standard angel food cake (and thanks for the ideas on how to use all those leftover egg yolks) but I'm going to try to make a chocolate version. I'll bet the chocolate angel food cake would be great with a fresh raspberry sauce.

The Braun is a whole different design than the Kenwood. The Braun doesn't have the planetary action, instead of that it turns the bowl besides the mixing action. And the head comes loose instead of tilting.

Here's a picture that shows the head loose from the machine. You see a slicer and a blender too.

The design of the Braun small appliances was famous in those days. The designers that made Braun famous for it's design products were Wilhelm Wagenfeld and Dieter Rams.
