Greg: Yup, Love to bake! I think that's where my kitchen fetish thing comes in. LOL
I'd post some pictures of some others but I'm afraid Eugene would hunt me down right now. Maybe after his cake cools awhile. After all his is RIGHT OUT OF THE OVEN!

OK time to share edited excerpts of the pvt e-mails I got

Chocolate Cake

Pre-heat the oven to 325F. Butter and flour a tube pan.
For the cake you will need:
2/3 cup Sauerkraut
1/2 cup cocoa (dutch-process--Droste is good!)
2 cups plain flour
1 t. baking powder
1 t. baking soda
1/4 t. salt
10 Tablespoons UNSALTED Butter
1 1/2 cups granulated sugar
3 large eggs
1 T. Vanilla flavoring
1 cup WHOLE Buttermilk

Method:
Rinse the sauerkraut in a collander, then squeeze the excess water out. Run it through the food processor untill chopped very fine.

In a seperate bowl, sift together the dry ingredients.

Put sugar and butter in large bowl of electric mixer and cream on high speed untill fluffy. Reduce speed to lowest setting and add eggs one at a time blending well after each addition. Add flavoring.

Slowly add about a third of the dry ingredients, then about half of the buttermilk. Then about another third of the dry ingredients and the remaining buttermilk. End with the rest of the dry ingredients. Add finely chopped sauerkraut.

Pour into prepared pan and bake about 45 minutes to an hour or untill tests done. Cool completely then turn out onto serving plate.

To make the glaze:
In a small saucepan, using low heat stir together about four ounces bittersweet (or semi-sweet) chocolate (I use Scharffen Berger 70 percent), 4 T. UNSALTED Butter, 1 t. sugarcane syrup.

When well blended turn off the heat and let come to room temperature. Drizzle over cake.

Cake, cake - my queendom for cake!

Geez guys....like I needed the excess poundage! Those cakes look absolutely delicious! My stomach started growling and I have been forced to dig into Hayley's plastic bear container of animal crackers! I am a desperate cake-craving woman!

Bethann: Girl, how do you do it? How do you keep the top of the *#& cake flat? Mine always end up looking like Beldar Conehead's cousin. Beautiful decorating too! Are you one of them "Wilton" gals? I am so jealous!

Eugene (sorry I keep perpetuating your outing): A big ol' hunk of your cake with a cup of coffee would be like winning the lotto! OK, a few extra pounds will make me "curvy". ;-) Oh, and about that eternal damnation...I heard if you had been really, really, bad - they would have sent you to Texas!:-0
 
Well Eugene & Toggle, I can't have the cake Eugene so thoughtfully baked because of my diverticulosis--it has the type of nuts I can't have [they're not attached darn it]. But I am a chocoholic through and through. So Bethann, I hate to disjoint such a beautiful cake, but I gotta have a piece of that awesome cake girl. And Gyrofoam, a piece of yours too darn it. I'd actually been sliding the scale digits down some even during the past two months' of holidays.

If you can all wait until tomorrow, I have a wonderful flourless, rich (decadent), (are you listening Toggle) chocolate cake that is easy to make. I will try and post tomorrow. Please check the thread tomorrow

I have been looking for that sauerkraut cake forever, and lo and behold here it is! My co-workers never believed me when we were talking about cakes the other day.

I'd post a pic of my poppyseed cake, but it's all gone. The recipe can be found on the back of Solo Poppyseed Filling labels.
