This is the strangest thing! I eat Quaker oats everyday. I've always LOVED oatmeal. Not the flavored kind, but just the old fashioned kind and I put frozen blueberries in them for flavor. I used to buy the Kroger Brand (in the plastic canister) but now I get the brand name Quaker at Costco. I filled the Kroger canister with part of the Quaker oats and after about half way through, I noticed it started tasting like soap (almost LITERALLY like someone poured some dish soap in them! I thought my dishwasher wasn't rinsing properly or something, so I washed a bowl by hand and it still tasted like soap..

So onto the next container and I threw the other container away and just use a large zip lock bag. The oats don't taste like soap for like the first half of the bag, but then as I get near the bottom, they start tasting like soap again! WTH??? It's definitely not my dishes. Nothing else tastes like soap...Like I said, I washed and rinsed a bowl really well by hand to make sure it wasn't the actual dish, so the dishes are out of the equation. Has anyone else ever noticed anything like this?

Maybe they do put in soap, so that later, the oats in the bowl don't stick. LOL
Oats with Tide! Maybe a new PG product. LOL

I too have these issues.....
a lot of problem with foods, for one, is how long it has been sitting on the store shelves, and two, bringing it home, and making it last.....

granted you can save a lot by buying it on sale or in bulk.......transferring a lot of stuff to Ziploc bags and containers, sometimes placing in the fridge/freezer can help, although extended stays can add transfer of flavors...

a lot of times, a good food sealer helps in spades......I got one that allows me to make any size bag, works with the Ziploc style bags, and especially the attachment for using canning jars, as some things stay best in glass....

you can sort and store in quantities as to fit your individual needs.....something as simple as potato chips, buy a big bag, and split into smaller ones(kept in darkness), always a fresh personal size ready, at a fraction of the cost.....

don't just stop at food with these things......jewelry/fine silverware wont tarnish in sealed bags, as well as comic books, certificates and personal paperwork, even dog food broke down to daily pouches, everything stays fresh...

let your mind go wild with something like this....

But the date on the package isn't nearly out of date, and when I store them, they are in a sealed container (but in the cupboard)..

I don't buy anything in bulk that goes bad quickly usually, but the shelf life of oats is pretty long. I never imagined oats going bad could taste like detergent! At any rater, I will start keeping them in the freezer once I open the package.
 
I eat Bobs Red Mill Oat bran and I think the package says to store it in the refrigerator so I keep mine in a plastic container with a lid.  It sounds like you buy more than one package at a time.  I usually limit my purchase to one at a time and don't store it.  Infact I usually won't store anything I just buy it when I need it.  I guess if you eat a lot of it so that it doesn't last any longer than a week or two storing does make good sense.
 
I looked at the Date on the big box of Quaker oats I bought at Costo. It's Dec 2015! At any rate, after I threw that last away, luckily it wasn't very much, the new bag I opened is fine and it's in the freezer from now on...
 
The soap taste in

your oats. Hummmmmm. Aside from getting old, dishes not rinsed well, etc. You're not crazy, nor is it any of the above. I have noticed that since I was a child. Even right off the store shelf. Try tasting a few without being cooked. You will see. Never mentioned it, cause I thought I was nuts. My family, and others say that I smell and taste things that do not exist.

They changed the recipe, a few years ago..

For the instant, microwaveable oats. 

 

All of the boxes taste like Sh!t now. Saddest part is, I actually ate two packets almost every single morning, since I was 8. I loved it that much...

 

I loved the taste of the brown sugar & cinnamon. It was relatively healthy (compared to sugary cereal) and was just a wonderful treat, to have every morning. 

 

They decided to change the recipe though (2010, 2011?) and now it tastes like soap, or coffee grounds, and lacks flavor completely. 

 

Supposedly, some like the Great Value brand from Wal-Mart. Wasn't too impressed by the impression of it. However... the new boxes that say "Classic Formula" are a bunch of BS. It's certainly not the Quaker Oats, I grew up eating, but instead a twist on the crappy reformulation. 
 
Now that it's been mentioned, I have noticed oatmeal to taste soapy before, but thought it was just me. I've never been a huge fan of oatmeal, but do eat it occasionally, although it gives me terrible heartburn for whatever reason- instant, old fashioned, flavored, unflavored, it all causes heartburn. I have a recipe for strawberry baked oatmeal that is absolutely fantastic, but still gives me heartburn... I eat that because it is so good and follow it with tums LOL.
