FOLD UP STEAMER INSERT

I have found this to be the ideal tool to hard cook eggs. I put water in the pan below the level of the insert, then this gizmo then the eggs. If you take the little loop handle out of the center you can fit an extra egg in. I put the pan over high heat to get the steam going, then lower the heat to medium or medium low for 10 minutes to keep the water boiling enough to keep steaming the eggs. One very nice thing about using the steamer insert is what I can do if I hear a shell crack. I keep my cupcake liners adjacent to the stove. If a shell cracks, I grab a liner, lift out the egg and nestle it in the liner before returning it to the pan. Because the insert is above the water, the cupcake liner will hold the egg and anything that oozes out of it so that it is not lost in the water. When the eggs are done, I run cold water in the pan, then drain most of it off and fill the pan with ice to quickly chill the eggs so that there is no green ring around the yolk.
 
Norgeway...I could not agree more....Green Beans Southern Style...are the best.....I lived in Manhattan years ago and decided that I would do a southern meal for my friends there...There was a great butcher, big Italian guy...I walked up and decided to act all "city-fied" and asked him for a "small square of salt pork"....He looked at me and grinned...said " where are you from? "...I said " Atlanta" ...he said " you wanted to say fatback didn't you?"...I said "YES, now just give it to me"...we both laughed....I also went all over the city trying to find White Lilly flour.....the tie in to the Waterless Cookware is that I had taken my grandmothers Rena Ware saucepan.....no pressure cooker ....well the dinner was a success........especially the sweet tea........and of course the green beans!
 
My first set was "Maxam 2000". The set was purchased circa 1980. I think they were also "cookware party sets", like Saladmaster cookware is sold. They were purchased in NOLA, from a ad in the paper. The man selling them was liquidating them for his father, that had suffered a heart attack. I remember he had the basic sets and the deluxe sets with the oil core electric skillet. I bought the basic set. I had forgotten this until i saw this post, I remember the son was upset about the situation, his father had purchased multiple boxes (probably 25 boxes) of this cookware to become a distributor. Today with eeebay it would be a cinch. alr2903
