The key to light, fluffy matzoh balls, without resorting to making them with fizzy water, is to make the batter good and moist, even adding a bit more water, letting it sit like they say to and then stopping the broth from bubbling before launching the kneidelach. Once they are all in, cover the pan and set the heat to low or simmer so that it takes 10 to 15 minutes to return to a very slow boil. If the water is too hot when the raw balls (OUCH!) are added, the protein in the raw dough will seize on the outside and not let the inside suck up the broth and swell. I always make mine in a Corning Ware 4 or 5 quart Dutch oven, the type with the flat bottom, not like the one in the oven of the Partio cart, and by the time they are through poaching, they cover the entire surface.
