Terry, someone gave the recipe for the oatmeal cake, then someone else the recipe for the frosting and the same cake recipe but with optional raisins. Well, here are both "combined".
Oatmeal Spice Cake
If using a KitchenAid, Kenwood, or other big mixer, use the flat beater.
13 x 9 (33 x 23 cm), greased and floured baking pan
350 °F oven
Combine and let sit for 20 or so minutes:
1 cup Oatmeal (raw), Old Fashioned or quick, but not instant!
1 1/2 cups boiling water. I boil the water in a Pyrex bowl in the microwave, and dump the oatmeal into that, add 1 cup raisins (optional). Stir, set aside.
Cream together:
1/2 cup (1 stick) butter
1 cup sugar
1 cup brown sugar, packed. I like dark brown sugar for this.
Cream it well. When using a stand mixer, I let it wail on it for a good 5-7 minutes.
Add:
2 "large" eggs
2 teaspoons vanilla extract
Also add the cooked, and slightly cooled, oatmeal with raisins (optional).
Stir together these dry ingredients:
1 1/2 cups all purpose flour
1 teaspoon baking soda
1 1/2 teaspoons ground cinnamon
1/2 teaspoon nutmeg, preferably freshly grated. I never measure, just grate until I've had enough
Stir the dry ingredients into the wets. Mix on medium speed (KA 45, about speed 4) for three minutes.
Pour into prepared pan, bake in preheated oven for 30 minutes, or until it looks good and smells better. Test with toothpick
Frosting:
1 cup sugar
1/2 cup butter
1/4 cup cream
3 egg yolks or 2 whole eggs and 1 TBS flour
Cook over low/medium heat in a heavy saucepan, stirring constantly, (no one had heard of a whisk yet) until mixture thickens and boils. Remove from heat and add
2 cups coconut
1 cup walnuts
1 tsp vanilla
Spread on cake.
