Does anyone like egg custard as good as I do!?? Well, here is the recipe from the old S and W cafeteria chain, for those who never got to experience being a kid and going to the S and W..let me explain, the S and W chain was started in Charlotte NC by two WW1 mess seargeants, soon they were everywhere from Washington DC to Atlanta Ga, unlike todays generic looking cafeterias, they most always had revolving doors, and very over the top buildings..." Think Fox Theatre" inside was tons of chrome marble and overdone opulence! Words cant describe it, except to say, when I was a child, anytime we went to Charlotte or Asheville, this is where we usually ate, and the food was no less fantastic than the building! this recipe was published many years ago in the Charlotte Observer, try it, it is wonderful...
S and W Egg Custard
1 1/4 cups sugar
2 Tbsp room temp Butter
1/2 tsp salt
4 eggs
2 cups whole milk
1 tsp vanilla
Preheat oven to 425,
line a 10 inch pie pan with pastry'
in mixer bowl,blend butter sugar and salt till lumps dissappear, add eggs, beat well beat in vanilla and milk, pour into crust, bake about30 to 40 min, until set but still jiggly in the center, dont overbake...I sprinkle with nutmeg before baking, also, place foil over edges if your oven browns too quickly....here it is after I ate half of it!
