Does anyone like egg custard as good as I do!?? Well, here is the recipe from the old S and W cafeteria chain, for those who never got to experience being a kid and going to the S and W..let me explain, the S and W chain was started in Charlotte NC by two WW1 mess seargeants, soon they were everywhere from Washington DC to Atlanta Ga, unlike todays generic looking cafeterias, they most always had revolving doors, and very over the top buildings..." Think Fox Theatre" inside was tons of chrome marble and overdone opulence! Words cant describe it, except to say, when I was a child, anytime we went to Charlotte or Asheville, this is where we usually ate, and the food was no less fantastic than the building! this recipe was published many years ago in the Charlotte Observer, try it, it is wonderful...
S and W Egg Custard
1 1/4 cups sugar
2 Tbsp room temp Butter
1/2 tsp salt
4 eggs
2 cups whole milk
1 tsp vanilla
Preheat oven to 425,
line a 10 inch pie pan with pastry'
in mixer bowl,blend butter sugar and salt till lumps dissappear, add eggs, beat well beat in vanilla and milk, pour into crust, bake about30 to 40 min, until set but still jiggly in the center, dont overbake...I sprinkle with nutmeg before baking, also, place foil over edges if your oven browns too quickly....here it is after I ate half of it!

Hans - I love custard pie (or custard anything, for that matter!)...this recipe is gonna get made!

I never experienced S & W - I don't think there was one here in Detroit (although we do have a fabulous Fox Theatre). We had a couple of other cafetarias and automats.

The idea of a cafeteria always appealed to me because you could get exactly what you wanted. When I was down to see my brother in Mebane he took us to a K&W cafetaria and I thought it was great fun. As I recall I was craving fried chicken and ate more than my fill at that stop.

Thanks MUCH for sharing this pie recipe - the simple, old-fashioned things often taste the best and satisfy the most!
 
Hans yo have made me so hungry for the egg custard pie.  Like Kevin will have to make it.  It is so sad that cafeterias are all nearly gone.  Here in our area the closest is either Ft. Smith or Tulsa and only one or 2 at that.  They have Furrs which have great pies and food.

 

We are lucky as we have a huge Cherokee Casino that has a great buffet and all kinds of homemade pie, cakes and pastry.
 
Uumm Good and Good for You Too!

I love custard pie. The addition of the butter adds richness that cream whould do allowing you to use whole milk. That means the recipe could be made by anyone with naturally occuring ingredients at home. I am having oven envy waiting for the kitchen to be back together.

almond milk? Coconut milk?

Know if this can be made with almond or coconut milk? I have a milk allergy.

(Now, y'all know I'm a shooter...I couldn't figure out why Smith and Wesson would have an egg custard).
 
You are talking about the custard pie, but I remember the dark green deep ceramic custard cups with baked egg custard in them sitting in the dessert sections of S&W and Morrisons & Davis Bros. cafeterias throughout the south in the 50s and 60s. I wonder if they had to soak them before running them through the dishwasher to be able to remove the light brown crust around the top.

If you want to really jazz up baked custard, try pouring a tiny bit of various liquors on top. You would not believe what less than a teaspoon of Chambourd does for a baked custard! It was like from the dessert bar in Heaven. Once you have the custard baked, it is so easy to turn it into creme brulee which is really heavenly.
 
K and W...

K and W is based in Winston Salem and is to me the best cafeteria today...although there are not many cafeteria chains left.K and W has food similar to the old S and W but the S and W was much more elegant.I remember Morrisons and the Apple House , but as far as I know, they are gone now.
 
Milk Substitute

You can use other product and you shouldn't have any issue at all. If the texture seems too soft for you after trying it, use a bit of xanthum gum next time to bind it.
 
In my opinion

the South African milk tart is the best variation of the custard pie. I currently buy mine from a local shop, but have done some research on the net and will try to bake one from scratch. The ingredients are pretty much identical to what's listed above, apart from plain flour and corn starch being used in the filling as well. For the SA variation the milk and butter are placed in a sauce pan and brought to the boil. The other filling ingredients are combined and creamed before some of the boiled milk mixture is stirred into it. Then the whole lot goes back into the boiled milk in the sauce pan where it simmers under constant stirring until it thickens. The pie crust is pre-baked and the thickened filling gets poured into it and is left to cool - no more baking. Once cooled it is sprinkled with cinnamon and refrigerated until ready to serve.

I've attached the internet recipe that I am going to try out for anyone who is interested.

Pray tell Hunter; is handling a big weapon, whilst eating custard pie, the secret behind your admission?
 
If you want a real treat, place some sliced apples in a bowl and add cinnamon & nutmeg and pour the liquid custard over the apples & bake. Then put some meringue on top and brown under the broiler a few minutes before serving.
It makes for a very impressive dessert!
 
Cafeterias I remember

All were located in Lafayette, LA:
In the Oil Center--Picadilly (Baton Rouge based I believe, began in the late 1950s and still in operation today)

When Northgate mall first opened during the mid-1960s, there was an A&G Cafeteria, and was in operation for about 20 yrs.

Morrison's came to Lafayette with the construction of the Acadiana Mall 1978. They may have existed for about 10 years, long gone.

Picadilly added a second location with the "On the Boulevard" shopping center around 1976. (could be off a year or two, not exactly certain)

Not too bad for a city in the top 5 for best tasting in Southern Living's Survey for best tasting food.
